Wild-shot Rabbit Pie

I’ve been enjoying episodes of Anthony Bourdain’s No Reservations lately. His attitude reminds me of why I love good food. Good food is equal parts of visceral living and connection – connection between physical and emotional, between cook and diners, between present and past. Smell and taste are hard wired into our brains and hooked into our memories more so than any other sense. When remembering a time distant lover it’s always the smell or taste that comes back first for me, followed distantly (if at all) by scattered recollections of sights and sounds. Bourdain often recounts similar experiences of memory and this is part of why he appeals to me. I also quite like the theme of No Reservations where good food doesn’t need to be complicated products of expensive establishments. Good food just needs to be true to the ingredients and the history of the people who make it, and this fits snugly with my own worldview that celebrates food cooked from scratch using techniques of my grandparents. Bourdain is also unashamedly omnivorous, but in a whole animal sort of way where all kinds and all parts of animals are celebrated. Although I admittedly suffer a little queasiness about offal, I enjoy eating meats other than the usual supermarket offerings of cow, sheep and chicken.

It’s with Bourdain’s perspective in mind that I’m posting a half recipe of wild-shot rabbit pie. This is a half recipe because there are no measureable quantities or exact directions, just some components and a process recounted. I must, however, start with an apology… due to the distractions of good company and a delicious bottle of Amisfield Pinot I clean forgot to take a snap of the final product. But rest assured friends, there was no limp pastry in sight.

The components of this dish were: one wild-shot rabbit; cumin, fennel and celery seeds; mushrooms, half an aubergine, bay leaves, garlic and an onion; stock (I used chicken). I broke my rabbit down into five parts so it would fit into the brazing dish by gently peering off the front and back legs. I fried the seeds by swirling in a hot dry pan until they give off a fine aroma, then ground them and rubbed them onto the flesh along with some salt and pepper. I caramelized each of the five rabbit parts in a heavy pan, deglazing with stock afterwards so as to reserve the goodness adhering to the pan after the meat has been removed. I used a cast iron dish that can be both sat the stovetop and in the oven so any golden goodness in the bottom of the dish missed by deglazing was retained (I am resisting the urge at this point to rant about how much I love cast iron cookware). There is something about the caramelization of meat that I find delicious. Lately with the advent if molecular gastronomy there has been a trend of water-bath or other low temperature methods of cooking meets. While I can see how these methods may preserve the tenderness and flavour inherent in animal protein, there is nothing quite like the sweetness, depth of flavour and aroma that comes from applying some decent heat (and a bit of extra fat) to meat.

Once the rabbit is sealed, I cooked the vegetable components down to the point of colouring and then put everything into a brazing dish. It is best to do this in batches so as not to crowd the pan. Overcrowding the pan will prevent browning because there is too much steam. Take care not to singe the onion or garlic as this will leave a bitter note in the dish. For many years I was half hearted about sautéed mushrooms on toast. Then I discovered that those limp, brownish, wet almost spongy things that I had been so often served were miss-treated fungi. Sliced and placed sparsely into a hot plan with a generous splash of high flash-point oil (I prefer rice bran oil at this point, but anything other than olive or walnut), with a little salt and pepper, they will fry till rich and golden. I like to finish mine at the last moment with a little knob of butter and French tarragon before turning out onto a thick slab of toast. Nom.

After caramelization I placed all components back into the brazing dish and topped it up with stock until the liquid almost covered the rabbit. I wanted this rabbit to roast on top while it stewed underneath. The concoction was slid into medium heat oven (around 150°C) and brazed, turning the meat occasionally, for around 5 hours. At this point I took the rabbit from the oven and stripped the meat from the bones using a knife and fork, savouring strips from the back-straps as chefs treats. I added the flesh back to the gravy filled brazing dish cooked this mix for another hour or so. In the end the vegetables had formed rich gravy and the meat was so tender it just disintegrated on the tongue. It would have been possible to stop here, give in to temptation and consume this with thick slabs of fresh white bred to soak up the gravy. But there is something special about pie…

After removing from the oven, I left the rabbit rest a while on the bench. While resting I added a little water every now and then, as it appeared to soak up the juices as it cooled and I didn’t want a dry pie. Ideally I would have waited a day or so for the flavours to develop before making it into pie, but impatience got the better of me. Spooned into a puff pastry case (see the bacon and egg pie recipe for pie making tricks) the rabbit returned to the oven once more and was cooked until the surrounding pastry was crisp and golden. The rabbit pie was served with creamy mashed potatoes and a side of fennel bulb that had been sliced, sautéed and topped with fennel seeds and char-grilled lengths of spring onion.

Vegan Barbeque – Warm Asparagus Salad and a Fresh Start for Summer

Summer has all but arrived here in Rotorua and I feel inspired to get back to my blog. However, the dynamic has changed somewhat; I no longer have a full kitchen or more than one to cook for on a regular basis. So this summer will be focused on quick, easy cuisine mostly cooked on the barbeque and, more often that not, vegetarian.

To kick off this summers theme I have an easy warm asparagus salad served on garlic crustini… the ultimate barbeque dinner for one in under 20 minutes.

For the crustini…
Slices of cheobatta or other flavoursome white bread
2 cloves of garlic crushed
4 tablespoons of olive oil

mix the olive oil and crushed garlic together. Brush this mix lavishly on both sides and sprinkle with sea salt.

For the salad…
1 dozen spears of young green asparagus
a capsicum
a handful of young spinach
olive oil

The asparagus spears have a woody section at their base. Remove this by taking each spear by either end and bending it until it breaks. It will break at the top of the woody section. Place spears into a bowl and cover in boiling water. Rest like this for a few minutes until their colour brightens. Drain and dress with olive oil and seasoning ready for the barbeque.

The capsicum I used is one that had been char-grilled yesterday and left in the fridge under oil. You can use fresh sliced capsicum, but it must be cooked for much longer than the asparagus. Slice the capsicum and, if already char-grilled, add to the asparagus. If not, keep separate and pop the capsicum on the barbeque well before the bread and the asparagus. 

Saute the vegetable mix on a hot plate while toasting the bread on open gill side, moving the slices regularly to avoid burning. When the asparagus is cooked to the point where it still has a little crunch (this will only take a couple of minutes), remove the vegtables from the BBQ and toss with young spinach. There should be sufficient oil in the the the BBQ’ed vegtables that the salad does not need further dressing. Serve salad mounded on top of the crispy bread.

There are of course limitless variations on this theme. I have recently made these barbequed crustini topped with grilled zucchini, field mushrooms, asparagus, halumi and a fresh cherry tomato salad. Quick, easy, fresh and seasonal – go mad.

Sunday brunch

Some friends from Auckland came down to stay for the weekend, so we put together a Sunday brunch.

Croissants were made yesterday following the recipe given by Dad Bakes.

Sourdough Loaf is the Norwich Sourdough posted by Wild Yeast.

Sourdough English Muffins are also from a recipe posted by Wild yeast.

The fresh egg mayonnaise is a recipe adapted from Ruth’s Mayonnaise in ‘Ottolenghi – The Cookbook‘. Ours is a milder version that was yummy on the fresh croissants with slices of cucumber fresh from the garden. Home made tangelo and grapefruit marmalades were also on offer, as was fresh brewed coffee.

Herbed Fresh Egg Mayonnaise (adapted from Ottolenghi)

Specialist equipment: blender (jug blender, stick blender or food processor)
Preparation time: 10 min

1 free-range egg
3/4 Tbsp Dijon mustard
2 tsp caster sugar
1/2 tsp salt
1 tsp crushed garlic (1 clove)
2 Tbsp cider vinegar 500 ml sunflower oil
2 large handfuls of either flat-leaf parsley or coriander (stalks and leaves)

Put egg, mustard, sugar, salt, garlic and vinegar into either a large bowl (if you are using a stick blender) or into a blender. Process while slowly drizzling the oil into the mix. When the mix thickens (it will also lighten in color) you can increase the rate of oil addition. Don’t be too hasty or else you will split it. If it does split, take the split mix out of the bowl, crack in another egg and slowly poor the mix back in while processing. Add the herbs last thing and process until they are chopped through. If you would like a smother, all be it green, final product, add the herbs about half way though. It is possible to do this by hand with a whisk, but it will take a little longer and it is quite a lot of arm work.

A classic Kiwi bacon and egg pie

Bacon and egg pie is a classic weekend lunch that is portable, tummy filling, can be dressed up or down, and is always a crowd pleaser. Last weekend my parents came for lunch, so I threw together this pie and dressed it up a little for the occasion by topping it with sautéed cherry tomatoes, onion jam and a sprinkle of Italian parsley.

The trick to making this a great lunch is keeping it simple. I used to make this pie with cheese and slices of tomatoes in it. Nowadays I make a stripped down version with just potatoes, bacon and the egg custard. The simpler ingredients means this pie travels better and is not too rich.

Bacon and Egg Pie

Preparation time: 30 min + 30-40 min baking time
Specialist equipment: spring-form cake tin (or pie dish if you do not have one)

3 medium potatoes (a waxy or all purpose variety)
6-10 rashers of streaky free range bacon
5 free range eggs
200 ml trim milk (plus a little more for glazing)
salt and pepper
3 sheets of flakey or puff pastry
oil for greasing tin

Preheat the oven to 200 degrees Celsius (classic bake or fan bake). Boil the potatoes with the skins on, cool a little and slice into about 1 cm thick slices. Slice the bacon, trimming off any rind, and fry or grill until a little crispy. I prefer to use good quality streaky bacon because of its superior flavor, but if you are worried about the fat content then use a shoulder cut and trim the fat off. Whisk together the milk and eggs. Season this custard while taking care to remember that the bacon will add a little saltiness to the dish.

Clip a sheet of baking paper into the base of the spring-form cake tin. This guarantees that the pie doesn’t stick to the bottom. Spray or brush the sides and bottom of the tin with oil. I always keep a can of ricebran oil on hand for these sorts of things: a high flash point and low flavor makes it perfect for these tasks.

I use pre-rolled sheets of puff or flakey style pastry. You can also use the kind that comes in blocks and roll it out yourself, or even make your own if you feel you have the time. Line the bottom and sides of your tin, using water and a little pressing to glue each patch of pastry to its neighbor. Allow a little overhang over the top lip of the tin. You will use the overhang later to cover your untidy ends.

Layer the potato slices and bacon into the pie (I made two layers of potato slices each topped with bacon pieces) and pour over the custard.

You can just top the pie with another sheet of pastry, poke a couple of holes in it, brush it with milk and pop it in the oven. Alternatively you could make a lattice work or woven top for the pie. Cut 10 strips of pastry at least as long as the diameter of your pie tin. Lay one strip across the middle of the dish and five perpendicular to it woven together in an under-over manner. By laying strips back on themselves you can easily weave in the rest of the strips.

Once the lattice is complete, trim the ends so the mesh fits snug against the sides. Fold inward the pastry that was left hanging over the rim to cover the ends of the strips.

You can either leave this folded edge loose or pinch it together at regular intervals to make a decorative edge.

Brush the pie top with milk and bake in a hot oven for 30-40 minutes or until the top is golden brown and the custard in the centre is set. When done and still hot, slip a knife between the pie and the tin wall to detach the pie where it may have stuck. Carefully unclip the lever on the tin to release the pie from its confines. Slide out and serve however you like.

Soggy bottomed pies are usually caused by either:
1. cooking the pie in a pyrex or ceramic dish that does not sufficiently conduct the heat to cook the base at a similar rate as the top
2. not having the oven hot enough
3. letting the pie sit for extended periods of time before baking it, thus allowing the custard to soak the pastry at the base.

Yummy eggs benedict; but would Escoffier have approved of what I did to his ‘Sauce Hollandaise’ recipe?

Before I got into the habit of scouring the internet for recipes to guide my cooking adventures, I relied on great recipe anthologies such as Escoffier’s ‘The Complete Guide to the Art of Modern Cookery’. I still refer to Escoofier’s tome for sauce recipes, particularly foundation sauces, because they contain absolutely reliable proportions. This morning I consulted this well thumbed volume for the recipe for Sauce Hollandaise. I used his ingredient proportions, somewhat scaled back, but prefer a modern method of making this classic sauce that uses a blender. I do wonder what the father of modern French cusine would have thought of my method.

Let’s face it, hollandaise can be tricky. I am sure everyone who makes it will have an incident (split sauce, scrambled egg mouthfeel, fatty aftertaste) at some point. I make my hollandaise in a blender and it works for me, in that it produces a good product with little risk of incident. It may offend some traditionalist’s sensibilities, but I’m more interested in getting a quality home made product onto the plate. The only tip that I can give that applies to both the traditional method and my method, is that it is always easier to make a large volume than a small volume. The two egg recipe I give below is the smallest volume I would attempt to make.

To go under the poached eggs, I made a fresh batch of sourdough english muffins. Once again I used the recipe from Wild Yeast but this time I made them a little more refined than the last batch which had to be cooked on the barbeque because there was a power cut. These are doomed to become a standard in our house because they are easy to make and full of flavor.

Sauce Hollandaise

Specialist equipment: blender
Preparation time: 10 minutes
Makes enough sauce for 4 portions.

2 Tbs water
1 Tbs vinegar (I prefer white wine)
fresh ground pepper
2 free-range egg yokes
200 g butter (melted)
1 lemon

Place the water, vinegar and a pinch each of the salt and pepper into a pot and reduce by half. Cool the reduction a little and place it and the egg yokes into the blender. If your yokes and reduction is lower than the blade, as it is in my blender, give them a little mix with a fork before starting. Swich the blender to a medium speed and slowly add the hot melted butter. This technique relies on the butter to cook the eggs, so the butter needs to be hot when it is addedd. About half way through, add a couple of drops of water. This helps ensure the sauce is light and has a nice mouthfeel. Add remaining butter, lemon juice to taste (I like my hollandaise quite piquant), salt and pepper.

If you are scaling up this recipe, retain the proportion of egg yoke to butter but decrease the relative volume of reduction. My blender can just hold four times this recipe without it coming flooding out the top.

Sauce hollandaise does not keep for long periods of time. It will, however, keep for a couple of hours in a warmish double boiler arrangement if topped with a cartouche. If you are just keeping it <20 min (the time it usually takes me to organize the rest of the meal) put the sauce hollandaise in a metal bowl or pot on the back of the stove (not on an element) and stir regularly to stop a skin from forming. The elevated ambient temperature in the vicinity of poaching eggs should stop the sauce from cooling too much.

I did not serve the eggs benedict in the traditional manner. Instead of ham (eggs Benedict), salmon (eggs Montreal) or spinach (eggs Florentine), we prefer alfalfa sprouts. Grown on our kitchen bench, they are crisp, fresh and go really well with the eggs.
